     I roast my turkey with the breast side down until the last hour of roasting, so that the breast stays moist from the natural juices draining down.
     Glad you liked the bacon wrapped version.
     The flavors might be too confusing for my southern taste buds.

   I don’t think I would want another meat flavor mixed with my turkey. Besides, there is plenty of fat in my gravy and cornbread dressing. That the turkey is so low in fat is one its redeeming qualities.
   When you roast it breast side down, it is self-basting.
